Finished a very busy week in fine fashion. The "Mary Pickford" went better than expected. The sorbet tempered nicely and everyone was really pleased.

The classic "Mary Pickford" was a prohibition era cocktail that incorporated Dark Rum, Pineapple, and Grenadine. My "Mary Pickford" is a Pineapple Upside Down Cake with homemade Sour Cherries, homemade Grenadine, Meyer Rum spike Anglaise and Honey-Citrus Sorbet. Previous posts also describe the Dehydrated Pineapple, Candied Vanilla Bean "skewer" and Honey Bee garnishes.

It takes a good crew to pull off a dessert like this at the end of a long day in a hot tent, so I am fortunate to have just that.
